Why soak nuts, grains and seeds?
  • To remove or reduce phytic acid
  • To remove or reduce tannins
  • To neutralize the enzyme inhibitors
  • To encourage the production of beneficial enzymes
  • To increase the amounts of vitamins, especially B vitamins
  • To make the proteins more readily available for absorption

Dehydrating Nuts

Raw nuts and seeds are an excellent source of protein and provide many health benefits.

The process begins by soaking nuts and seeds for two hours with sea salt to remove the phytic enzymes.   Then rinse, salt if you choose, and dehydrate until they are crispy or the desired texture.  Make sure the nuts are completely dry so mold doesn't form on the inside of the nut.   When dehydrating, keep the temperature under 125 degrees so you don't destroy any of the nutrients in the nut or seed.
